The PSI by Peter Sisseck is not Pingus: no new oak is used, the wines are made in a less extracted, less showy style, and the goal is to produce a terroir-driven expression of organically and biodynamically cultivated Tempranillo. Grapes ferment with a 30+ day maceration with punch downs. The wine ages for about 18 months in a mix of cement tanks, old French barriques and large barrels. Malolactic fermentation occurs. The resulting wine is deeply, intensely dark-fruited with a bit of wood at an early stage, but lots of transparency as well. Minerals assert themselves on the palate.
