The vineyards are managed organically with deep respect for the environment, the expressiveness of the native grape varieties, and care for local biodiversity. The grapes are hand-harvested and undergo two weeks of maceration in cement tanks. The wine ages for a total of ten months, beginning with the first third in cement, the second third in 600-litre tonneaux, and the remaining time in large wood barrels of 30 hectolitres. After bottling, the wine rests in the cellar for six months before release.
